Tater-tot Casserole

One of Nicole's favorite dinners
 

Ingredients:
Grated cheese 1 can cream of chicken soup
1 regular bag of tater tots ½ lb hamburger browned
Sour cream

Put the tater tots on the bottom of an 11x9 inch pan. Then sprinkle with the ground beef. Then mix can of cream of chicken soup with some sour cream. Pour on top. Then top with cheese. Bake at 350 for about 30 minutes.



Ham Verdo
 

Ingredients:
Broccoli ½ tsp lemon juice
1 cup cubed ham ¼ tsp curry powder
grated cheese 1 can cream of chicken soup
½ cup mayonnaise

Spread Broccoli in 11x9 inch pan. Top with cubed ham (you can also use cubed chicken or turkey). Mix together soup, mayonnaise, lemon juice, and curry powder. Spread over broccoli. Cover with graded cheese. Bake at 350 for 35 minutes. We like to serve it with rice, and even eat it on top.



Pizza Pasta
 

Ingredients:
4 oz pepperoni 8 oz masticotti (or other pasta)
green pepper 1 pkg spaghetti seasoning
Onion 1 cup mozzarella cheese
1 ¾ cup water 1 can tomato paste

Cook pasta according to pkg directions. Fry pepperoni , drain. Then add green pepper and onion, cook till tender. Add seasonings, tomato paste and water, mix with pasta in 8x8 pan top with cheese. Bake at 350° for 15min.



Cheesy Broccoli Soup
 

Ingredients:
2 cups water 3 TBS flour
1 tsp chicken bouillon 1 cup milk
¼ cup butter 1 bunch broccoli (or frozen – thawed)
½ cup onion chopped 1 lb cheddar cheese (cubed)
2 small potatoes chopped ham (optional)

In large sauce pan, bring water and bouillon to boil. Cook potatoes 5-7 mins. Then add broccoli and simmer for 3-4 min – till crisp and tender. (Add chopped ham if desired). Drain, reserving 1 ½ cups liquid. In another sauce pan sauté onion in butter till tender. Wisk in flour till blended. Add milk and cheese. Cook over med heat till melted, stir often. Stir in broccoli and reserved liquid.



Chinese Pork Ribs
 

Ingredients:
1/3 cup soy sauce 1/3 cup orange marmalade
3 TBS ketchup 2 cloves garlic minced
3-4 lb pork ribs

In bowl, combine soy sauce, marmalade, ketchup, and garlic. Pour half into slow cooker. Top with ribs. Pour remaining sauce over. Cover and cook on low for 6 hours or till tender. Thicken juices if desired. (this sauce can also be use with pork chops or chicken.) Serve with rice.



Chicken Taco Pie
 

Ingredients:
1 cup jack cheese grated 1 tsp salt / 1 tsp pepper
1 cup chopped onion 3 cans cream of chicken soup
2 TBS cooking oil 1 ½ cups sour cream
2 TBS Taco seasoning 3 cups cubed chicken (cooked)
1 ¾ tsp chili powder 6-8 flour tortillas

Cook onions in oil, add seasoning, soup and sour cream. Heat and stir until smooth. Add chicken. Oil 2-3 qt. casserole dish. Cover with torn up tortillas. Spread in ½ sauce then top with a layer of chicken. Repeat layers. Top with cheese. Bake at 350° until bubbly and hot (about 45 minutes).
